Dinner from the garden: Chard and white beans

chard and spinach for dinner at 2 green acres, a maryland garden
This week, we used our chard and spinach to cook a great dish - chard, white beans, and tomatoes. It is great to have enough chard and spinach to cook. We made so much, we will even have leftovers. This is our first time making this recipe (which we cut out of the newspaper years ago). It was simple and wonderful.

I love the fact that a larger portion of our meals are coming from the garden. And more to come!

  1. That looks delicious!! Are you going to post the recipe?

  2. Oh yes, please post the recipe, it looks delicious.

  3. That looks so good. I love cooking with beans and have a lot of dried beans in my garden now. I'll have to wait until fall to harvest though.

  4. I pulled the recipe from an article in the paper years ago. It is from a cookbook called "Lidia's Italy."

It is pretty simple - cook the dried beans (after soaking) for 40 minutes, add some salt. Boil the chard in a small amount of water (enought to cover) for about 15 minutes.

Heat olive oil in a pan, add sliced garlic and cook for a minute. Then hot pepper flakes, and tomatoes. Once the tomatoes are warm, add beans and chard. Cook rapidly to reduce liquid - then serve and eat! Enjoy

  5. Very simple recipe! It looks delicious.
